“Healthy Night” was once of the best gourmet nights EVER! And funny, we ended up with a perfect summer dinner with all of these fresh and tasty recipes! It was all paired with Effen Cucumber vodka cocktails thanks to Erin’s “dessert” and delicious Whole Foods label mint sparkling water April brought. This salad was one of the tastiest salads ever – could have eaten the whole bowl!
Ingredients:
- 1/4 cup(s) olive oil
- 3 tablespoon(s) fresh lemon juice
- 1 teaspoon(s) honey
- Kosher salt and pepper
- 1 shallot, finely chopped
- 2 large heads Boston or Bibb lettuce, leaves torn (about 12 cups)
- 3 cup(s) mixed fresh herb leaves, such as parsley, mint, cilantro, dill, basil (April used cilantro, basil & mint)
Directions
- In a bowl, whisk together the olive oil, lemon juice, honey, 1⁄2 tsp salt and 1⁄4 tsp pepper; stir in the shallot.
- In a bowl, toss the lettuce and herbs. Toss with the vinaigrette just before serving
