Roasted Veggies

Healthy Night side dish was so simple and tasty

Ingredients:

  • 4 red bell peppers, sliced
  • 2 yellow bell peppers, sliced
  • 1/2 bunch of asparagus
  • 4 organic (therefore mini) zucchinis, in 1/2 sliced down the middle

Directions

Hit a broiler-safe pan with cooking spray and place the veggies.  Sprinkle with salt and pepper generously.  Drizzle olive oil.  Broil til they bubble and fizzle and char up to your liking.
